To manufacture tofu, soybeans are soaked in water and then ground to a puree with a small amount of water. The resulting mixture is called slurry. The slurry is boiled and strained to produce soy milk (not the commercial kind), which is simmered for a short time before a coagulant is added, causing it to separate into curds and whey. Coagulants include calcium sulfate, lemon juice or vinegar. The curds are processed into molds, resulting in the final product. Tofu is a versatile food that absorbs the flavor of the foods with which it is cooked. Tofu Moo, which is powdered tofu, tastes similar to milk but contains no lactose—good news for the estimated 70 percent of the world’s population that is lactose- intolerant. Tofu Moo is fat-free, cholesterol-free and low in sodium. One 8-ounce serving contains 50 percent of the Daily Value for calcium. Tofu Moo also contains iron, phosphorus, potassium, choline and fat-soluble vitamin C, as well as the essential fatty acids lineolic and oleic acid. Tofu Moo is a healthful addition to the daily diet. It can be mixed with water for a tasty drink, substituted for milk, or added to recipes.
